Ingredients

  • 1 pound salmon fillet cut into 1-inch cubes
  • 1 tablespoon olive oil or cooking spray lightly coats salmon for crust
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • ½ cup panko breadcrumbs or cornmeal for crunchy coating
  • optional spices such as garlic powder, paprika, or lemon zest
  • 1 lemon wedges for serving and brightness
  • dipping sauces such as ranch, tzatziki, or aioli, for serving

Equipment

  • Air fryer For cooking salmon bites evenly with a crisp crust
  • Knife For cutting salmon fillet into cubes
  • Mixing bowl To season and coat salmon pieces

Method

  1. Pat the salmon dry with paper towels to remove excess moisture for better crisping.
  2. Cut the salmon into 1-inch uniform cubes for even cooking and consistent texture.
  3. Season the pieces lightly with salt, pepper, and optional spices like garlic powder.
  4. Coat salmon bites with a light spray of oil, then toss in panko or cornmeal until evenly covered.
  5. Preheat your air fryer to 400°F (204°C) for 3–5 minutes before cooking.
  6. Air fry the salmon bites at 400°F for 8 minutes, shaking or flipping halfway through; look for a golden exterior and an internal temperature of 125–130°F.
  7. Serve with lemon wedges and dipping sauces such as ranch, tzatziki, or aioli for a flavorful contrast.

Notes

Store leftovers cooled completely to keep crispness. Reheat in the oven at 350°F with foil for moisture and crunch, or microwave briefly for softness but less crisp. Freeze airtight for up to 2 months. Avoid stacking bites immediately after cooking to maintain crisp texture.
