Ingredients

  • 1 lb ground pork 80/20 fat ratio, fresh not frozen
  • 2 tablespoon soy sauce regular or low-sodium
  • 1 tablespoon hoisin sauce adds sweet-salty depth; optional
  • 1 tablespoon rice wine
  • 1 teaspoon sesame oil toasted sesame oil preferred
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch binds moisture and prevents crumbly texture
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 green onions white parts chopped for filling, green tops reserved for garnish

Equipment

  • Air fryer Used to cook the ground pork filling without splattering or skillet
  • Mixing bowl To combine ground pork and seasonings
  • Instant-read thermometer To check internal temperature of cooked pork at 160°F

Method

  1. Combine ground pork, soy sauce, hoisin sauce, rice wine, sesame oil, sugar, cornstarch, minced garlic, grated ginger, and chopped green onion whites in a mixing bowl. Stir with a spatula for 30 seconds until just combined to avoid dense filling.
1 lb ground pork, 2 tbsp soy sauce, 1 tbsp hoisin sauce, 1 tbsp rice wine, 1 tsp sesame oil, 1 tsp sugar, 1 tsp cornstarch, 2 cloves garlic, 1 tbsp fresh ginger, 2 green onions
  2. Set your air fryer to 375°F and preheat for 3 minutes before adding pork mixture.
  3. Shape the pork mixture into 1-inch meatball-sized pieces or break into small clumps. Place them in a single layer in the air fryer basket leaving 1-inch gaps between pieces.
    1 lb ground pork
  4. Cook pork pieces 6 minutes at 375°F without opening the basket.
  5. Shake the basket vigorously to flip all pieces. Cook 4-6 minutes more until internal temperature reaches 160°F and edges are lightly caramelized.
  6. Transfer cooked filling to a plate and let rest uncovered for 5 minutes to allow juices to redistribute. Garnish with reserved green onion tops before stuffing into steamed bao buns or serving over rice.
    2 green onions

Notes

  • Do not overcrowd the air fryer basket; leave 1-inch gaps between pork pieces to prevent soggy filling.
  • Mix ingredients just until combined to avoid dense texture in the filling.
  • Use fresh ground pork (80/20 fat) for best texture and juiciness.
