Method
- Pat the chicken wings dry thoroughly with paper towels to remove excess moisture.
- Toss the wings with baking powder, salt, and neutral oil until evenly coated.
- Preheat the air fryer to 380 °F.
- Arrange the wings in a single layer in the air fryer basket, leaving space for air flow.
- Air fry the wings at 380 °F for 15 minutes, shaking or flipping halfway through cooking for even browning and crispness.
- Check doneness with a meat thermometer. The wings should reach an internal temperature of 165 °F and feel firm to the touch.
- Remove the wings from the air fryer and toss immediately with fresh lemon zest, lemon juice, black pepper, and optional garlic powder off heat.
- Let the wings rest for 5 minutes to allow juices to redistribute before serving while skin is still crisp.
Notes
Store leftovers in an airtight container in the refrigerator. Reheat in a preheated oven at 350 °F wrapped loosely with foil to preserve crispness. Freeze in airtight containers for up to 2 months. Add a splash of lemon juice or broth when reheating to refresh flavor and moisture. Avoid microwaving large batches to keep skin crisp.
