Ingredients

  • 4-6 pieces lamb chops rib or loin
  • 2 tablespoon olive oil for coating chops to prevent sticking
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon fresh thyme optional, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika optional
  • 1 tablespoon lemon juice optional, for finishing
  • 1 teaspoon mustard optional, for finishing

Equipment

  • Air fryer Used for cooking the lamb chops
  • Meat thermometer To check internal temperature for doneness
  • Tongs For flipping the lamb chops

Method

  1. Pat lamb chops dry with paper towels. Rub each chop with olive oil.
4-6 pieces lamb chops, 2 tbsp olive oil
  2. In a small bowl, mix minced garlic, chopped rosemary, thyme (if using), salt, black pepper, and paprika. Press the herb mixture evenly onto both sides of each chop. Let sit at room temperature for 15 minutes while the air fryer preheats.
3 cloves garlic, 1 tbsp fresh rosemary, 1 tsp fresh thyme, 1 tsp salt, 0.5 tsp black pepper, 0.5 tsp paprika
  3. Preheat the air fryer to 400°F for 3 minutes.
  4. Place lamb chops in the air fryer basket in a single layer, leaving at least 1 inch of space between each chop to avoid steaming.
    4-6 pieces lamb chops
  5. Cook the chops for 5 minutes on the first side until edges start browning and fat cap crisps.
    4-6 pieces lamb chops
  6. Flip chops using tongs and cook for an additional 3 to 7 minutes depending on desired doneness (8 minutes total for rare, 10 minutes for medium-rare, 12 minutes for medium). Use a meat thermometer to check internal temperature.
    4-6 pieces lamb chops
  7. Remove chops from the air fryer when their temperature is 5 degrees below your target (135°F for medium-rare). Tent with foil and let rest 5 minutes for juices to redistribute.
    4-6 pieces lamb chops
  8. If desired, drizzle with lemon juice and/or spread mustard over chops as a finishing touch before serving.
1 tbsp lemon juice, 1 tsp mustard

Notes

  • Pat chops completely dry before seasoning for a crisp crust.
  • Do not overcrowd the air fryer basket to avoid steaming instead of crisping.
  • Use a meat thermometer to remove lamb at 5 degrees below your target temperature and let rest for best juiciness.
