Ingredients

  • 2 pieces filet mignon steaks 6-8 oz each, 1.5 inches thick, room temperature
  • 1 tablespoon olive oil brush lightly on both sides
  • 1 teaspoon salt preferably coarse kosher salt
  • 0.5 teaspoon black pepper freshly cracked
  • 0.5 teaspoon garlic powder
  • 2 tablespoon butter softened, for finishing
  • 1 teaspoon fresh thyme stripped from stems and chopped, mixed in butter
  • 1 teaspoon fresh rosemary stripped from stems and chopped, mixed in butter
  • balsamic glaze optional, for drizzling

Equipment

  • Air fryer Used to cook the filet mignon evenly with circulating dry heat.
  • Instant-read thermometer To check internal temperature of steak for doneness.
  • Tongs Used to flip the steaks halfway through cooking.

Method

  1. Remove steaks from fridge 20 minutes before cooking. Pat completely dry with paper towels. Brush both sides lightly with olive oil. Season generously with salt, black pepper, and garlic powder.
2 pieces filet mignon steaks, 1 tbsp olive oil, 1 tsp salt, 0.5 tsp black pepper, 0.5 tsp garlic powder
  2. Set air fryer to 400°F (200°C) and preheat for 5 minutes to create the initial sear.
  3. Place steaks in the basket with space between them. Cook for 5 minutes, then flip with tongs. Cook an additional 4-7 minutes depending on preferred doneness (4 min rare, 5-6 min medium-rare, 7 min medium). Check internal temperature at the 8-minute mark and pull steaks at 130°F for medium-rare (the temperature will rise to 135°F while resting).
    2 pieces filet mignon steaks
  4. Transfer steaks to a cutting board and tent loosely with foil. Rest for 5 minutes to allow juices to redistribute and temperature to climb.
  5. Mix softened butter with chopped thyme and rosemary. Place a dollop of herb butter on each steak. Optionally drizzle with balsamic glaze before serving.
2 tbsp butter, 1 tsp fresh thyme, 1 tsp fresh rosemary, balsamic glaze

Notes

  • Pat steaks dry and bring to room temperature before cooking for even searing.
  • Flip steaks halfway through cooking to ensure uniform browning.
  • Rest steaks for 5 minutes after cooking to retain juices and enhance tenderness.
