Ingredients

  • 1.5 lb cod fillets skinless, cut into 8 strips about 1" thick
  • 0.75 cup all-purpose flour
  • 0.25 cup cornstarch
  • 2 egg large, beaten with milk
  • 0.33 cup milk whole or 2%
  • 1.5 cup panko breadcrumbs plain
  • 1 tablespoon taco seasoning store-bought or homemade
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper freshly ground
  • 8 corn tortillas 6-inch
  • 2 cup green cabbage finely shredded (about half small head)
  • 2 lime 1 for slaw, 1 for serving
  • 0.25 cup cilantro chopped
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tablespoon hot sauce such as chipotle or sriracha
  • 1 avocado ripe, sliced (optional)
  • neutral oil spray for air fryer basket and fish

Equipment

  • Air fryer Basket-style or drawer; 3–5 qt works for 4 servings
  • Shallow bowls For flour, egg wash, and panko station
  • Mixing bowl For slaw and sauce
  • Tongs For flipping fish and handling tortillas

Method

  1. Preheat the air fryer to 400°F for at least 5 minutes; lightly spray basket with oil.
  2. Mix flour, cornstarch, taco seasoning, salt, and pepper in a shallow bowl.
  3. Whisk eggs and milk in a second bowl; place panko in a third bowl and press cilantro into panko if desired.
  4. Pat cod strips dry, dredge each first in the flour mix, then in egg wash, then press into panko to adhere.
  5. Arrange fish in a single layer in the air fryer basket, spray tops lightly with oil, and air fry at 400°F for 8–10 minutes until crust is golden and fish flakes at 145°F.
  6. Toss shredded cabbage with juice of 1 lime and a pinch of salt; mix mayo, sour cream, hot sauce, and 1 tablespoon lime juice for crema.
  7. Warm tortillas in a dry skillet 20–30 seconds per side or in the air fryer 1 minute at 350°F; assemble tacos with fish, slaw, crema, avocado slices, and extra lime.

Notes

  • Cut fillets into uniform 1" strips so each piece cooks in 8–10 minutes at 400°F.
  • Press panko onto the egg-washed fish with your palm to build a secure crust before air frying.
