Ingredients

  • 1 lb shrimp peeled, deveined, tails on or off, medium (31–40) or large (21–30)
  • 1 tablespoon neutral oil canola or avocado
  • 1 tablespoon lime juice fresh, about 1 lime
  • 1 teaspoon lime zest finely grated
  • 1 tablespoon chili powder or 1 teaspoon gochugaru
  • 0.5 teaspoon smoked paprika
  • 1 clove garlic minced
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper freshly ground
  • 1 lime wedge for serving; 1 wedge per 2 servings
  • 2 tablespoon fresh cilantro chopped for garnish

Equipment

  • Air fryer Basket-style or drawer 3–6 quart
  • Mixing bowl Medium, non-reactive for marinating
  • Tongs For flipping and removing shrimp

Method

  1. Preheat the air fryer to 400°F for 3 minutes while you prepare the shrimp.
  2. Pat shrimp very dry with paper towels and place in a medium bowl.
  3. Mix oil, lime juice, lime zest, chili powder, smoked paprika, minced garlic, salt, and pepper in a small bowl and pour over shrimp; toss to coat and let sit 10–15 minutes maximum.
  4. Arrange shrimp in a single layer in the air fryer basket with minimal overlap; work in batches if necessary.
  5. Cook at 400°F for 4 minutes, shake or flip shrimp, then cook an additional 3–4 minutes until edges are slightly charred and shrimp are opaque and springy.
  6. Transfer shrimp to a platter, brush with any reserved marinade (not the raw used marinade), sprinkle chopped cilantro and extra lime zest, and serve immediately with lime wedges.

Notes

  • Do not marinate shrimp in acidic marinade longer than 15 minutes or the texture will turn mushy.
  • Cook shrimp in a single layer and avoid overcrowding — two batches for 1 lb may be necessary in small air fryers.
