Ingredients

  • 1 lb salmon skinless, boneless, cut into 1-inch cubes
  • 2 tablespoon lime juice freshly squeezed (about 1 lime)
  • 1 teaspoon lime zest finely grated, from 1 lime
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon garlic minced (about 1 small clove)
  • 1 tablespoon honey
  • 0.75 teaspoon kosher salt
  • 0.25 teaspoon black pepper freshly ground
  • fresh cilantro for garnish, chopped (optional)
  • lime wedges for serving

Equipment

  • Air fryer basket-style or drawer, 3–5 quart capacity
  • Instant-read thermometer for checking salmon doneness
  • Mixing bowl medium

Method

  1. Preheat the air fryer to 400°F for 3 minutes while you prep the salmon.
  2. Pat salmon cubes dry with paper towels and transfer to a medium mixing bowl.
  3. Whisk lime juice, lime zest, olive oil, chili powder, smoked paprika, minced garlic, honey, salt, and pepper in a small bowl until combined.
  4. Toss the salmon gently with the marinade for 1–2 minutes; let rest 10–20 minutes but no longer to avoid acid 'cooking'.
  5. Arrange salmon in a single layer in the air-fryer basket with ¼-inch gaps; cook at 400°F for 8 minutes, then check one cube.
  6. Flip cubes gently with tongs if your air fryer requires; continue cooking 1–2 minutes more until internal temp reads 125–130°F for medium or 140°F for well done.
  7. Transfer bites to a plate, sprinkle with chopped cilantro and a little extra lime zest, and serve immediately with lime wedges.

Notes

  • Do not over-marinate in citrus longer than 20 minutes or fish texture will firm visibly.
  • Use an instant-read thermometer to check the thickest cube for accurate doneness.
