  • 1 tablespoon neutral oil avocado or canola
  • 1 teaspoon chili powder or ancho-based blend
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground cayenne adjust to heat preference
  • 1 tablespoon brown sugar packed; optional for caramelization
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper freshly ground
  • 1 teaspoon cornstarch optional for extra crisp
  • cilantro small handful chopped for garnish (optional)

Method
 

  1. Preheat the air fryer to 400°F for 3 minutes while you prep; ensure the basket is clean and dry.
  2. Pat the chicken tenders dry with paper towels and place in a medium bowl.
  3. Whisk lime zest, lime juice, oil, chili powder, smoked paprika, cumin, garlic powder, cayenne, brown sugar, salt, and pepper in a small bowl; pour over tenders and toss to coat evenly.
  4. If using cornstarch, sprinkle it over the coated tenders and toss briefly; arrange tenders in a single layer in the air fryer basket with space between pieces.
  5. Cook at 400°F for 4 minutes, flip tenders with tongs, then cook 3–4 more minutes until internal temperature reads 165°F and edges are golden with tiny blisters.
  6. Transfer to a plate and rest 3 minutes; sprinkle reserved lime zest and chopped cilantro before serving.

Notes

  • Do not overcrowd the basket—cook in two batches if necessary for even crisping.
  • Use an instant-read thermometer at the thickest point to confirm 165°F for safe, juicy tenders.
