Air Fryer Chickpea Fritters served on a plate

Air Fryer Chickpea Fritters

No ratings yet
Coarsely mashed chickpeas combined with flour, egg, aromatics, and spices create tender fritters that crisp perfectly in the air fryer. A 10-minute rest hydrates the flour to improve binding, while spraying oil before cooking ensures golden, crunchy edges. These fritters make a quick, healthy appetizer or snack with minimal fuss.

Ingredients

  • 1 can (15 oz) chickpeas drained and patted dry
  • 0.25 cup all-purpose flour or chickpea flour; add gradually until batter holds shape
  • 1 large egg or flax egg (1 tablespoon ground flax + 3 tablespoon water, let sit 5 minutes)
  • 0.5 teaspoon baking powder optional for lighter texture
  • 0.5 small onion finely diced
  • 2 cloves garlic minced
  • 0.25 cup fresh parsley or cilantro, chopped finely
  • 1 teaspoon ground cumin toast 30 seconds before adding if possible
  • 0.5 teaspoon ground coriander toast 30 seconds before adding if possible
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • oil spray for basket and fritters

Method

  1. Mash chickpeas coarsely in a mixing bowl using a fork or potato masher, leaving some chunks for texture. Add diced onion, minced garlic, chopped herbs, and all spices. Stir until evenly combined.
1 can (15 oz) chickpeas, 0.5 small onion, 2 cloves garlic, 0.25 cup fresh parsley, 1 tsp ground cumin, 0.5 tsp ground coriander, 0.5 tsp paprika, 0.5 tsp salt
  2. Add the egg to the mixture and stir to coat the chickpeas. Gradually add flour one tablespoon at a time until batter is sticky but holds shape when pressed. Stir in baking powder if using. Let batter rest at room temperature for 10 minutes to hydrate the flour.
1 large egg, 0.25 cup all-purpose flour, 0.5 tsp baking powder
  3. Scoop about 2 tablespoons of batter per fritter and press gently to form 2-inch diameter patties about ½ inch thick. Place patties on a plate while shaping the rest. Lightly spray the air fryer basket with oil.
  4. Arrange the fritters in a single layer in the air fryer basket with about 1-inch gaps. Lightly spray tops with oil. Cook at 375°F for 7 minutes, then flip each fritter with a spatula, spray again with oil, and cook for another 5 to 8 minutes until golden brown and firm to touch.

  5. Let the fritters cool for 3 minutes before serving to let them firm up and allow excess steam to escape. Serve warm with tahini sauce, garlic yogurt dip, or spicy harissa mayo.

Notes

  • Drain and pat chickpeas dry thoroughly to avoid soggy batter.
  • Resting the batter for 10 minutes hydrates the flour and improves binding.
  • Spray oil on fritters and basket before and during cooking to enhance crispiness without deep frying.
