Ingredients

  • 1 lb chicken sausage fully cooked, links or sliced
  • 2 bell peppers mixed colors, sliced into ½-inch strips
  • 1 onion medium, yellow or red, sliced into ½-inch strips
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning or dried herbs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice or balsamic vinegar optional, drizzle after cooking
  • 0.25 teaspoon crushed red pepper flakes optional

Method

  1. Preheat air fryer to 400°F for 3 minutes. Pat bell peppers and onion strips dry with paper towels to remove excess moisture.
    2 bell peppers, 1 onion
  2. Slice sausage into ½-inch rounds or leave links whole. Toss sausage, peppers, onions, garlic, olive oil, Italian seasoning, salt, black pepper, and optional red pepper flakes in a mixing bowl until evenly coated.
1 lb chicken sausage, 2 bell peppers, 1 onion, 2 cloves garlic, 1 tsp Italian seasoning, 0.5 tsp salt, 0.25 tsp black pepper, 2 tbsp olive oil, 0.25 tsp crushed red pepper flakes
  3. Arrange mixture in a single layer in the air fryer basket, leaving about 1 inch space between pieces. Cook in batches if needed to avoid overcrowding and steaming.
  4. Air fry for 8 minutes. Open basket and toss everything with tongs to rearrange so inside edges move to the outside for even browning.
  5. Cook for 7 to 10 more minutes until sausage reaches 165°F internal temperature and peppers soften with light char. Let rest for 2 minutes before serving. Drizzle with lemon juice or balsamic vinegar if using.
1 lb chicken sausage, 2 bell peppers, 1 tbsp lemon juice or balsamic vinegar

Notes

  • Pat peppers and onions dry before tossing with oil to prevent steaming.
  • Cook in batches if basket overcrowds to ensure crisping.
  • Check sausage internal temperature at 15 minutes and add time as needed.
