Ingredients

  • 1 lb cauliflower trimmed into 1-inch florets (about 12 oz after trimming)
  • 1.5 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper freshly ground
  • 8 corn tortillas 6-inch, warmed
  • 0.5 cup plain Greek yogurt or vegan yogurt
  • 1 tablespoon lime juice fresh
  • 1 teaspoon honey or agave for vegan
  • 1 cup red cabbage thinly sliced
  • 0.5 cup pickled red onion quick-pickle: 2 tablespoon vinegar + 1 teaspoon sugar + 4 tablespoon water
  • 0.25 cup cilantro chopped
  • 0.5 cup lime wedges

Equipment

  • Air fryer Basket-style or drawer; 3–5 quart capacity
  • Mixing bowl Large enough to toss florets
  • Sheet pan For warming tortillas or oven alternative

Method

  1. Preheat air fryer to 400°F for 3 minutes while you prepare cauliflower.
  2. Toss cauliflower florets with olive oil, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper in a large bowl until evenly coated.
  3. Arrange florets in a single layer in the air fryer basket without overcrowding; cook at 400°F for 8 minutes.
  4. Shake the basket or flip florets and continue cooking for 6–8 minutes until edges are golden brown and a fork slides into the center with slight resistance.
  5. Warm corn tortillas in the air fryer 30–45 seconds at 375°F until slightly charred at the edges; keep wrapped in a clean towel.
  6. Mix Greek yogurt, lime juice, and honey in a small bowl to make crema; adjust lime or honey to taste.
  7. Assemble tacos with 2–3 florets per tortilla, top with cabbage, pickled red onion, cilantro, a drizzle of crema, and a lime wedge.

Notes

  • Cut florets to uniform 1-inch pieces for even browning.
  • Do not overcrowd the air fryer basket; work in batches for best crisp.
