Ingredients

  • 2 pounds chicken wings whole or separated into drumettes and flats
  • ½ cup buffalo sauce made by mixing hot sauce and melted butter
  • ½ teaspoon salt for seasoning wings before cooking
  • cooking oil spray to lightly spray wings for crispness
  • ½ teaspoon garlic powder adds smoky depth
  • ½ teaspoon smoked paprika adds smoky depth
  • 1 teaspoon baking powder (aluminum-free) optional, boosts crispiness
  • 1 cup celery sticks classic pairing for cooling contrast

Equipment

  • Air fryer For crisp, faster cooking with less oil
  • Mixing bowl To mix wings and seasoning
  • Paper towels To pat wings dry before cooking

Method

  1. Pat wings thoroughly dry with paper towels to remove surface moisture.
  2. Preheat the air fryer basket to 380°F (193°C) for 3–5 minutes for even crisping.
  3. Spray wings lightly with cooking oil spray, arrange in a single layer in the air fryer, and cook for 12 minutes.
  4. Flip wings, spray again lightly with oil, and cook for another 10–13 minutes until golden and crisp.
  5. Warm buffalo sauce by mixing hot sauce and melted butter, then toss wings until evenly coated.

Notes

- Wings cook best at 380–400°F for about 20–25 minutes, flipping halfway through for crispness.
- Store wings in airtight containers; reheat at 400°F in air fryer or oven for 3–4 minutes.
- Sauce wings just before serving to keep skin crispy.
- Swap butter with vegan butter for dairy-free, or hot sauce with low-sodium versions as desired.
- Try celery sticks and blue cheese or ranch dressing as classic sides.
