Air fryer beignets are pillowy squares with a crisp outer shell and a soft, airy inside. This recipe uses yeast dough proofed in warm milk, then air fried at 350°F for golden brown pillows without the mess of deep frying. Make a special breakfast or brunch treat with minimal oil and quick cleanup.

Ingredients
  

  • 2.5 cups all-purpose flour spooned and leveled
  • 1 packet active dry yeast 2¼ tsp
  • 0.25 cup granulated sugar divided; 1 teaspoon for proofing yeast
  • 1 cup whole milk warmed to 105°F
  • 3 tablespoon unsalted butter melted and slightly cooled
  • 1 large egg room temperature

Method
 

  1. Warm milk to 105°F, stir in active dry yeast and 1 teaspoon granulated sugar, let sit for 5-10 minutes until foamy and frothy.

  2. In a mixing bowl, combine all-purpose flour, remaining sugar, melted butter, egg, and yeast mixture. Knead for 5 minutes until dough is soft but not sticky.

  3. Cover bowl with a towel and let dough rise at room temperature for 1 hour or until doubled in size.
  4. Roll dough to ½-inch thickness on a floured surface. Cut into 2-inch squares and lightly spray both sides with vegetable oil spray.

  5. Arrange dough squares in a single layer in the preheated air fryer at 350°F, spacing pieces 1 inch apart. Cook for 8-10 minutes, flipping halfway at 4-5 minutes, until golden brown and puffed.
  6. Remove beignets from air fryer and cool on a wire rack for 5 minutes before dusting generously with powdered sugar.

Notes

  • Proof yeast fully in warm milk to ensure airy texture; milk must be 105°F not hotter.
  • Space beignet pieces 1 inch apart in the air fryer to avoid soggy edges.
  • Cool before dusting with powdered sugar so it sticks without melting.
