Ingredients

  • 1 cup Coconut Milk Use straight from the can, shake to mix cream layer; adds coconut flavor. Skip if you need neutral flavor.
  • Greek Yogurt Mix Mix equal parts Greek yogurt and whole milk; tangy and thicker. Thin with milk if batter is stiff; temper before adding to hot sauces.
  • 0.33 cup Butter-Milk Melt ⅓ cup butter into ⅔ cup whole milk. Rich and buttery, best for baking. Use unsalted butter and whisk well.
  • 1 cup Evaporated Milk Use 1:1 ratio; slightly caramelized flavor, best in cooked dishes. Skip if fresh cream flavor needed or whipping.
  • Tofu Mix Blend equal parts silken tofu and unsweetened soy milk until smooth; neutral and thick. Thin with soy milk if too thick.
  • 1 cup Cashew Cream Soak and blend raw cashews with water; rich and slightly sweet. Skip if nut allergy is a concern.
  • Cream Cheese Mix Blend equal parts softened cream cheese and whole milk; tangy and dense. Temper before adding to hot liquids to prevent seizing.
  • White Bean Mix Blend cooked white beans with milk until smooth; mild and earthy. Thin with milk or broth as needed.
  • 1 cup Half-and-Half Use 1:1 ratio straight for lighter creaminess; no prep needed. Skip if whipping or extra-rich dessert required.

Method

  1. Choose your substitute based on the recipe use: whipping, cooking, or baking for best texture.
  2. Prepare the substitute as needed: shake coconut milk, blend tofu or cashew cream, melt butter for butter-milk, or blend cream cheese mix until smooth.
  3. Use the substitute at the recommended ratio: generally 1:1 except butter-milk (⅓ cup butter + ⅔ cup milk), and mixes with equal parts components.
  4. Adjust thickness by thinning with milk, soy milk, or water if too thick or thickening by simmering if too thin.
  5. Temper acidic ingredients like Greek yogurt and cream cheese by slowly whisking in hot liquid before adding to hot sauces to prevent curdling or seizing.
  6. Avoid using these substitutes for whipping as none mimic heavy cream's peak capacity; chilled coconut cream is the closest option but not perfect.
  7. Taste and adjust seasoning for tang or sweetness especially with yogurt, tofu, or white bean mixes.
  8. When baking, reduce other liquids slightly if the batter seems too loose with butter-milk or Greek yogurt mix.

Notes

Thin Greek yogurt mix slowly to prevent curdling in sauces and maintain smooth texture.
