Ingredients

  • 1 cup Arugula Use 1:1 ratio for watercress, stronger peppery bite
  • 1 cup Mâche Use 1:1 ratio for watercress, mild buttery flavor, no pepper heat
  • 1 cup Baby Spinach Use 1:1 ratio, no pepper heat but fresh leafy texture
  • 1 cup Mustard Greens Use 1:1 ratio, holds sharp pepper heat when cooked
  • 1 cup Dandelion Greens Use 1:1 ratio, more bitter and coarse than watercress
  • DIY Blend (2 parts Arugula : 1 part Baby Spinach) Mix 2:1 arugula to spinach for balanced pepper and mildness
  • 1 cup Tatsoi Use 1:1 ratio, tender with mild mustard tone, best cooked

Method

  1. Select the substitute based on your dish (raw salad, cooked, or blend).
  2. If needed, wash and lightly dry or drain the substitute greens.
  3. Apply the recommended ratio: generally 1:1 with watercress, or 2:1 for the DIY blend.
  4. Adjust the amount or blend to taste, considering pepper heat and bitterness.
  5. Taste and check texture before serving or adding to cooked dishes.

Notes

  • Arugula provides the closest peppery bite but can be more bitter.
  • Mustard greens and tatsoi are better for cooked dishes due to their heat retention and tenderness.
  • The DIY arugula and spinach blend balances pepper flavor and mildness for raw uses.
