Ingredients

  • 1 cup Fontina Cheese Use 1 cup Fontina for every 1 cup Toma. Creamier texture, mild nutty flavor. Reduce heat to medium to prevent splitting.
  • 1 cup Queso Fresco Use 1 cup Queso Fresco for every 1 cup Toma. Mild, fresh, slightly tangy, less creamy. Stays crumbly; best added at end to warm dishes.
  • 1 cup Young Asiago Cheese Use 1 cup Asiago for every 1 cup Toma. Sharper flavor, firmer texture. Reduce added salt by one-quarter to balance boldness.
  • 1 cup Monterey Jack Use 1 cup Monterey Jack for every 1 cup Toma. Mild buttery flavor, good meltability. Melt faster; lower heat or reduce cook time slightly.
  • Raclette Cheese Use equal amounts Raclette for Toma. Strong earthy flavor, gooey melt. Reduce oven heat by 25°F to prevent fast browning.
  • 0.75 cup Ricotta Salata Use ¾ cup Ricotta Salata for every 1 cup Toma. Crumbly texture, saltier, does not melt. Best for finishing, not baking layers.

Method

  1. Choose your substitute based on the dish's needs: Fontina or Monterey Jack for melting; Queso Fresco or Ricotta Salata for crumbling; Asiago for flavor and firm texture; Raclette for strong flavor and gooey melt.
  2. For melting cheeses like Fontina and Monterey Jack, use a 1:1 ratio with Toma. Reduce heat to avoid splitting (Fontina) or reduce cook time due to faster melt (Monterey Jack).
  3. For crumbly cheeses such as Queso Fresco and Ricotta Salata, add them at the end to warm dishes without melting completely. Use Queso Fresco 1:1 and Ricotta Salata at ¾ cup per cup Toma.
  4. When using Raclette, use equal amounts and reduce oven temperature by 25°F to prevent browning too fast. Stir constantly when melting to avoid grease pooling.
  5. Adjust seasoning when using sharper cheeses like Asiago by reducing added salt by about one-quarter. Grate or shave as preferred for salads or toppings.
  6. Taste your dish after adding substitute cheese to adjust salt and seasoning as necessary, especially for saltier options like Ricotta Salata and Queso Fresco.

Notes

Add Fontina slowly with constant stirring to prevent sauce splitting during melting.
