Ingredients

  • 1 cup Tempeh Use 1:1 by volume; firmer texture and nuttier flavor than tofu.
  • 1 cup Chickpea Tofu Use 1:1 by volume; soft texture similar to silken tofu, breaks apart easily under heat.
  • 1 cup Paneer Use 1:1 by volume; holds shape well when cooked, not vegan.
  • Seitan Use 0.75:1 by volume tofu (¾ the volume); chewy texture, contains gluten.
  • 1 cup Mashed Beans Use 1:1 by volume; creamy texture without holding shape, add near end of cooking.
  • 1 cup Eggplant Use 1:1 by volume; cube, salt, drain, and cook before use; soft spongy texture,
  • 1 cup Greek Yogurt Use 1:1 by volume; tangy, creamy, but curdles under heat,

Method

  1. Choose your substitute based on the cooking method and desired texture.
  2. Prepare the substitute accordingly: drain, mash, blend, or cube as needed.
  3. Apply the substitute at a 1:1 ratio by volume with tofu, except seitan which uses 0.75:1 ratio.
  4. Adjust seasoning and salt especially for beans and seitan to balance flavors.
  5. Add more delicate substitutes like Greek yogurt or mashed beans at the end to avoid texture breakdown.

Notes

  • Tempeh and paneer hold up best under high heat like stir-fries and grilling.
  • Chickpea tofu and mashed beans work well in soups and creamy sauces but do not hold shape.
  • Greek yogurt is ideal for cold or low-heat dishes as it curdles when heated.
