Ingredients

  • 0.75 cup AP Flour + Cornstarch Use ¾ cup all-purpose flour plus ¼ cup cornstarch for every 1 cup of tempura flour. Milder flavor, less airy.
  • 1 cup Cake Flour Use 1:1 ratio to tempura flour. Lighter texture, softer finish.
  • 1 cup Rice Flour Use 1:1 ratio. Gluten-free, crispier and more brittle coating.
  • 1 cup Gluten-Free Blend Use 1:1 ratio. Texture varies by blend; add baking powder if no leavening.
  • 1 cup Self-Rising Flour Use 1:1 ratio. Adds mild puffiness and lighter texture.
  • 1 cup Chickpea Flour Use 1:1 ratio. Nutty flavor, denser crumb; add extra water to batter.
  • 0.5 cup Cornstarch + AP Flour Use equal parts ½ cup cornstarch and ½ cup all-purpose flour for 1 cup tempura flour. Very light and crisp coating.

Method

  1. Select a substitute based on your need for gluten-free options or desired texture (lighter, crispier, or denser).
  2. Blend or mix substitutes like chickpea flour gradually with extra water to reach batter consistency similar to heavy cream where needed.
  3. Measure and combine ingredients according to the specified ratios for each substitute to replace 1 cup tempura flour.
  4. For frying, watch oil temperature especially with rice flour and cornstarch blends to avoid burning the coating.
  5. Chill cornstarch-flour batter before frying for an extra crispy texture when using that substitute.
  6. Taste and check consistency of batter; adjust liquid amounts gently to avoid too dense or watery batter.

Notes

Add extra water gradually when using chickpea flour to avoid a batter that's too thick or gritty.
