Ingredients

  • 1 to 1 Use equal amounts of Feta Cheese as a substitute for Teleme Cheese. Tangier and saltier, works for both fresh and cooking applications.
  • 1 to 1 Use equal amounts of Queso Fresco as a fresh cheese substitute. Mild and less tangy, best for fresh salads and cooking without melting.
  • 1 to 1 Use equal grated amounts of Ricotta Salata. Firmer texture, holds up in cooked dishes without turning mushy.
  • 1 to 1 Use equal amounts of Halloumi Cheese when grilling or frying. Firm and squeaky texture, non-melting cheese.
  • 1 to 1 Use equal amounts of firm, low-moisture Mozzarella for melting. Mild and melty, cleans melt but less tangy.
  • 1 to 1 Use equal amounts of Paneer. Non-melting, mild flavor, firm texture, good for cooking with bold spices.
  • 0.75 cup Cotija Cheese Use ¾ cup Cotija per 1 cup Teleme Cheese. Crumbly and sharp, ideal as a topping, not for melting or mixing in batter.

Method

  1. Choose your substitute based on what Teleme Cheese does in your dish: melt, crumble, or firm texture.
  2. Prepare the substitute as needed, such as grating Ricotta Salata or slicing Halloumi thick for frying.
  3. Apply the substitution ratio as indicated: usually 1:1, except Cotija which uses ¾ cup per 1 cup Teleme Cheese.
  4. Adjust seasoning and texture by taste-testing and adding substitutes gradually to maintain balance.

Notes

Drain Queso Fresco before use and taste-test Feta slowly to avoid overly salty or watery results.
