Ingredients

  • 1 cup Baby Kale Use 1:1 ratio for fresh spinach. Chop thick stems for salads.
  • 1 cup Swiss Chard Use 1:1 ratio for spinach in cooked dishes. Remove or finely chop stems before use.
  • 1 cup Arugula Use 1:1 fresh arugula for spinach in raw salads. Avoid overcooking.
  • 1 cup Collard Greens Use 1:1 ratio, chopped and cooked. Requires longer cooking time to soften.
  • 1 cup Baby Lettuce Use 1:1 ratio for raw salads and wraps only. Not suitable for cooking.
  • 1 cup Frozen Spinach (thawed and drained) Use 1 cup thawed and drained frozen spinach per 1 cup fresh.
  • DIY Leafy Mix (3 parts baby lettuce, 1 part finely chopped kale) Use 1:1 ratio for spinach in salads and light sautés. Chop kale finely.

Method

  1. Choose the substitute based on your recipe—raw salads, cooked dishes, or smoothies.
  2. Prep the substitute by washing, chopping, thawing and draining if frozen, or blending as needed.
  3. Apply the 1:1 substitution ratio or blend ratio for DIY mix; adjust texture by chopping stems or draining extra water.
  4. Check final dish for flavor balance and consistency, adjusting seasoning as necessary.

Notes

  • Baby kale and Swiss chard are best for cooked dishes and wilt similarly to spinach.
  • Arugula works well raw but becomes mushy when overcooked.
  • Frozen spinach must be thawed and squeezed dry to avoid watery texture.
