If you run out of rutabaga, several root vegetables can fill in depending on your dish. Turnips and kohlrabi offer texture and firmness similar to rutabaga, while yellow potatoes and parsnips provide creaminess for mashes and purees.

Ingredients

  • 1 cup Turnip Use 1:1 by volume as a direct swap; slightly sharper flavor
  • 1 cup Kohlrabi Use 1:1 by volume; crisper and mildly peppery
  • 1 cup Yellow Potato Use 1:1 by volume; sweeter and softer texture
  • 1 cup Parsnip Use 1:1 by volume; nutty and more aromatic, sweeter
  • 1 cup Carrot Use 1:1 by volume; bright sweet flavor and softer texture
  • DIY Root Blend (Turnip + Yellow Potato) Use 3:1 ratio (¾ cup turnip + ¼ cup yellow potato) per 1 cup rutabaga;
  • 1 cup Daikon Radish Use 1:1 by volume; peppery and lighter body, softens faster

Method

  1. Choose the substitute based on your cooking method and desired texture or flavor.
  2. Prepare the substitute by peeling and cutting to similar size as rutabaga for even cooking.
  3. Use the indicated 1:1 volume ratio for most substitutes; use 3:1 for the DIY root blend.
  4. Adjust cooking time slightly: add softer roots (parsnips, carrots, potatoes) later to prevent mushiness.
  5. Taste and check texture towards the end of cooking; adjust seasoning as needed.

Notes

  • Turnips provide the closest texture and earthiness to rutabaga, especially for roasting and stews.
  • Parsnips and carrots add more sweetness and soften faster, so add them later in cooking.
  • The DIY root blend balances firmness and creaminess, ideal for mashed or stewed dishes.
