Ingredients

  • 1 Wire Cooling Rack Thin metal, check oven rating
  • Vegetable Bed Arrange evenly; adds aromatic flavor
  • Aluminum Foil Rack Shape to fit; disposable, bends under weight
  • 1 Inverted Cooling Rack Flip upside down for height
  • 1 Broiler Pan Rack Sturdy, drains fat well
  • 1 Silicone Trivet Check temp rating first
  • Raised Cutting Board Invert for lift; resting only, not roasting

Method

  1. Choose your substitute based on the roast weight and airflow needs; wire cooling rack is the closest match for most uses.
  2. For vegetable beds, arrange thick slices of carrots, celery, and onions evenly in a single layer about 1 inch thick.
  3. For foil racks, crumple aluminum foil into ropes and shape into a grid or spiral to fit your pan.
  4. Flip a cooling rack upside down to add height when using it as an inverted cooling rack substitute.
  5. Use a broiler pan rack for heavy roasts; ensure it fits your pan and supports the weight without bending.
  6. Check the heat rating before using a silicone trivet in the oven and note it provides less lift and airflow than a wire rack.
  7. Use a raised cutting board inverted only for resting cooked meat, not for active roasting.
  8. Adjust cooking time as needed if the substitute sits lower or restricts airflow compared to your roasting rack.

Notes

Drain vegetable bed thoroughly before use to prevent excess moisture that can make the roast soggy.
