Ingredients

  • 1 leaf Lettuce Fresh, crisp, no soaking needed. Use one large leaf per rice paper sheet.
  • 1 sheet Nori Umami-rich, slightly chewy, use 1:1 ratio with rice paper.
  • 1 leaf Collard Greens Steam first to soften, one leaf replaces one sheet of rice paper.
  • 1 sheet Wheat Wrappers Best for frying, not gluten-free. Use one sheet per rice paper sheet.
  • 1 leaf Swiss Chard Blanch briefly, mild bitterness. One leaf replaces one rice paper sheet.
  • 1 sheet Soy Paper Thin, pliable with subtle bean flavor. Use one sheet for one sheet.
  • Phyllo Dough Use 1–2 sheets per rice paper sheet. Crispy when baked or fried, brush with oil between layers.

Method

  1. Choose substitute based on whether your recipe needs fresh, fried, or sturdy wrappers.
  2. Prepare leafy greens by rinsing and blanching or steaming if needed to soften (collard, chard).
  3. Use lettuce leaves fresh as-is; no soaking or drying needed.
  4. Use nori dry, keep fillings dry to avoid sogginess, and toast briefly if desired.
  5. Use wheat wrappers for frying, seal edges before cooking and keep covered to prevent cracking.
  6. For phyllo dough, layer 1 or 2 sheets brushed with oil, bake or fry until golden and crispy.
  7. Replace one rice paper sheet with the equivalent amount of substitute based on type.
  8. Check wrap texture and integrity before serving to ensure proper structure and texture.

Notes

Drain Swiss chard leaves well to prevent watery rolls and slippery texture.
