Ingredients

  • 1 cup Cornmeal Use 1:1 for polenta by volume. Slightly coarser texture than polenta.
  • 1 cup Creamy Grits Use 1:1 by volume. Smoother, softer than polenta. Cook 10-15 minutes until thick.
  • 0.75 cup Semolina Flour Use ¾ cup for every 1 cup polenta. Add slightly more liquid due to faster absorption. Wheaty flavor, less corn taste.
  • 1 cup Mashed Potatoes Use 1:1 by volume. No corn flavor; creamy base in savory dishes.
  • 1 cup Cooked Quinoa Use 1:1 by volume. Nutty flavor, grainy texture. No creaminess or corn flavor.
  • Corn & Potato Starch Blend Use equal parts of blend to replace 1 cup polenta. Thickening only, smooth texture, no slicing.
  • 0.75 cup Rice Flour Use ¾ cup for every 1 cup polenta. Fine, mild flavor. Smooth texture, no corn taste.

Method

  1. Identify if your recipe requires creaminess, firmness, or thickening to choose the appropriate substitute.
  2. For cornmeal or grits, whisk or stir into simmering liquid and cook until thick, about 5 to 15 minutes depending on the substitute.
  3. If using semolina or rice flour for baked dishes, use ¾ cup per cup of polenta and add extra liquid for absorption.
  4. Use mashed potatoes or cooked quinoa as creamy or grainy bases respectively at a 1:1 ratio, noting flavor differences.
  5. For corn & potato starch blend, mix equal parts and use only for thickening sauces or batters, not as a standalone grain.
  6. Adjust the liquid quantity gradually to prevent the mixture from becoming too thick or too thin while cooking.
  7. Taste test and check consistency frequently during cooking to ensure texture and flavor meet your dish needs.

Notes

Use semolina flour with extra liquid for baked dishes to prevent a dry or overly firm texture.
