  • 1 Hoisin Sauce Use equal parts and add a teaspoon of rice vinegar per tablespoon to brighten the tang; Sweeter and saltier than Plum Sauce.
  • 1.25 Apricot Jam Mix Mix 1 tablespoon apricot jam with 1 teaspoon rice vinegar per tablespoon of Plum Sauce; Fruity and less acidic than the original.
  • 1 Sweet Chili Sauce Use equal parts; Start with half if heat-sensitive and add more; Adds mild heat and texture with chili flecks.
  • 1 Char Siu Sauce Use equal parts; Brush on during last minutes of cooking; Smoky and rich with thicker consistency.
  • 1.25 Tamarind Mix Mix 1 tablespoon tamarind paste with 2 teaspoons brown sugar per tablespoon of Plum Sauce; Warm briefly to dissolve sugar; More sour tang.
  • 0.75 Date Syrup Use ¾ tablespoon per tablespoon of Plum Sauce; Add a teaspoon of rice vinegar or lemon juice; No acidity, very sweet.
  • 1.25 Plum Jam Mix Combine 1 tablespoon plum jam with 1 teaspoon soy sauce per tablespoon of Plum Sauce; Plum flavor, saltier than original.

Method

  1. Choose your substitute based on the dish, whether for glazing, dipping, or stir-fry finishing sauce.
  2. Prepare mixtures as needed, such as mixing jams with vinegars or sugars to balance sweetness and acidity.
  3. Apply the substitutes using the ratio guidance provided, adjusting quantities carefully.
  4. For substitutes like Hoisin and Tamarind Mix, add vinegar to brighten flavor where indicated.
  5. For Sweet Chili Sauce, start with half amount if sensitive to heat, then taste and add more.
  6. Warm Tamarind Mix briefly to dissolve sugar and blend flavors fully.
  7. Brush Char Siu Sauce on proteins during last few minutes of cooking to avoid burning.
  8. Taste the final dish and adjust salt, sweetness, or acidity as needed for balance.

Notes

Add vinegar slowly to Hoisin Sauce to avoid overly salty flavor and maintain balanced tang.
