Course: Cheese
Cuisine: Greek, Mediterranean

Ingredients

  • 1 cup Provolone cheese shredded, use 1:1 ratio for kasseri
  • 1 cup Asiago cheese grated, use 1:1 ratio for kasseri
  • 1 cup Monterey Jack cheese shredded, use 1:1 ratio for kasseri
  • 1 cup Caciocavallo cheese use equal amounts for kasseri substitute
  • 1 cup Muenster cheese sliced, use 1:1 ratio for kasseri
  • ¾ cup Kefalotyri cheese use ¾ cup for every 1 cup kasseri
  • 1 cup Manchego cheese shredded, use 1:1 ratio for kasseri

Method

  1. Provolone melts smooth and stretches similarly to kasseri. It's milder, with less tang and a creamier finish. Use in grilled cheese, saganaki, and baked dishes for gooey pull.
  2. Asiago offers a sharper, nuttier flavor and firmer texture better for grating than melting. Use grated asiago over pasta and baked dishes.
  3. Monterey Jack melts clean with a buttery mild flavor, good for quesadillas and casseroles where cheese should blend into the background.
  4. Caciocavallo has a similar stretched-curd structure with sweeter, more complex flavor and holds up under high heat. Ideal for grilling and frying like saganaki.
  5. Muenster quickly melts to a very soft, smooth consistency with mild buttery flavor. Use in sandwiches and mild casseroles but avoid high-heat cooking.
  6. Kefalotyri is harder, saltier, and sharper. It melts less creamy but works well in saganaki and as a grating cheese over Greek pasta. Reduce added salt when using.
  7. Manchego melts similarly to kasseri with a sweeter, nuttier finish. Firm enough for grating but melts smooth in baked dishes. Good for cheese plates or Spanish/Greek recipes.
  8. Match the cheese substitute to your cooking method: soft melters for saganaki, firm cheeses for grating, and mild cheeses for sandwiches or casseroles.

Notes

Drain provolone before using to prevent watery dishes and ensure a smooth melt.
