Ingredients

  • 1 to taste Paneer firm, no salt, needs seasoning to match halloumi flavor
  • 1 to taste Queso Blanco less chewy, creamy texture, mild flavor
  • 1 to taste Queso Panela soft, creamy, subtle saltiness
  • 1 to taste Bread Cheese squeaky texture, mild, buttery, slightly sweet
  • 1 to taste Firm Tofu press and salt before use for best texture
  • 1 to taste Provolone melts more, cut thick slices to reduce melting
  • 1 to taste Kefalotyri sharp, hard, salty cheese, good for frying

Equipment

  • Grill or skillet For grilling or frying substitute cheeses
  • Press or weight For pressing firm tofu before use

Method

  1. Choose the substitute based on your cooking method and flavor needs: paneer, queso blanco, and bread cheese for grilling; queso panela and firm tofu for salads.
  2. For grilling or frying, cut firm cheeses like provolone and kefalotyri into thick slices to reduce melting but expect some softening.
  3. Season paneer and firm tofu well with salt and herbs before cooking to mimic halloumi's salty, tangy flavor.
  4. Press firm tofu for at least 30 minutes to remove excess water, then rub with coarse salt and let rest for 10 minutes before cooking.
  5. Grill or fry substitutes on high heat to develop a firm crust and avoid steaming, flipping carefully to maintain shape.
  6. Avoid substitutes like provolone if cooking over high heat for long periods as it melts faster than halloumi.
  7. Use queso panela for milder, creamier texture and milder saltiness, better suited for topping salads or gentle cooking.
  8. Kefalotyri offers a strong salty and sharp flavor; ideal for Greek-style fried cheese dishes like saganaki.

Notes

Press firm tofu before cooking to prevent soggy texture and ensure it holds shape during grilling or frying.
