Method
- Determine your recipe’s need: baking, cold thickening, or hot sauce thickening to pick the best substitute.
- For ground chia seeds, grind whole seeds and let gel for 5–10 minutes before use to activate thickening.
- For agar agar, dissolve in boiling liquid for 2–3 minutes before adding and allow to set as it cools.
- For gelatin, bloom in cold water for 5 minutes, then melt into warm liquid before mixing into your recipe.
- Mix substitutes into liquids slowly to prevent clumping, adjusting amounts slightly based on texture and potency.
- Use xanthan gum and psyllium husk as 1:1 swaps, arrowroot and agar agar as per specified ratios, and double cornstarch amounts.
- Check final texture and taste. Adjust amount of substitute as needed for consistency and flavor balance.
