Ingredients

  • 1 cup Regular Plain Yogurt Use 1:1 ratio by volume; thinner texture and milder acidity; add 1 tablespoon flour to thicken dips if needed.
  • 1 cup Sour Cream Use 1:1 ratio by volume; richer and tangier; holds in cold dips but splits if heated too fast.
  • 1 cup Blended Cottage Cheese Use 1:1 ratio by volume; blend until no visible curds remain; mild and slightly grainy texture.
  • 1 cup Silken Tofu Use 1:1 ratio by volume; add 1 teaspoon lemon juice or vinegar to mimic acidity; blend completely to avoid clumps.
  • 0.75 cup Crème Fraîche Use ¾ cup for every 1 cup Greek Yogurt; rich, buttery, mild; best for cooking, avoid baking.
  • 1 cup Buttermilk Use 1 cup per ¾ cup Greek Yogurt; tangy and thinner; reduce other liquids by ¼ cup in baking to compensate.
  • 0.5 cup Mayonnaise Use half the amount of Greek Yogurt; rich and oily with less tang; best for creamy dressings and spreads.

Method

  1. Choose your substitute based on use: sour cream or blended cottage cheese for dips and dressings; buttermilk for baking; silken tofu for vegan options and smoothies.
  2. Prepare substitutes as needed: blend cottage cheese or silken tofu until smooth; add lemon juice or vinegar to tofu to add tang.
  3. Apply the substitute using the recommended ratios: mostly 1:1 by volume except crème fraîche (¾ cup per 1 cup) and mayonnaise (½ cup per 1 cup).
  4. Adjust for texture and consistency: add a tablespoon of flour to thicken dips made with regular plain yogurt; reduce other liquids by ¼ cup when using buttermilk in baking.
  5. Allow dips with regular plain yogurt to chill 30 minutes to firm up; stir crème fraîche into hot sauces right before serving to prevent curdling.
  6. Taste test and check consistency before final serving; add more substitute gradually if needed to avoid watery or greasy textures.

Notes

Blend cottage cheese smoothly to prevent a gritty texture in baked goods.
