Ingredients

  • 1 tablespoon Chia Seeds Use ground chia seeds mixed with 3 tablespoon water to replace 1 tablespoon ground flaxseeds; slightly more gelatinous texture
  • 3 tablespoon Applesauce Use unsweetened applesauce; 3 tablespoon replaces 1 tablespoon flaxseeds; reduces other liquids by 1–2 tbsp; adds sweetness, no nuttiness
  • 3 tablespoon Banana Use mashed banana; 3 tablespoon replaces 1 tablespoon flaxseeds; fruity flavor and dense texture
  • 1 tablespoon Psyllium Husk Use ground psyllium husk mixed with 3 tablespoon water; stronger binding and neutral taste; add extra water if batter stiff
  • 1 tablespoon Whole Chia Use whole chia seeds with 3 tablespoon water; seeds visible with slight crunch; hydrate for 10 minutes
  • 1 tablespoon Hemp Seeds Use as topping only; no binding capacity; adds soft crunch and mild nutty flavor
  • 1 tablespoon Tahini Use stirred smooth tahini; adds fat and moisture; pronounced sesame flavor; light binding

Method

  1. Identify the role flaxseeds play in your recipe: binding, moisture, or crunch.
  2. For binding and moisture, use ground chia seeds or psyllium husk mixed with water as per specified ratios.
  3. For moisture without nutty flavor, use applesauce or mashed banana in the amounts specified, adjusting liquids accordingly.
  4. For texture and crunch, use whole chia seeds, hemp seeds, or tahini as toppings or mix-ins following the ratios given.
  5. Grind seeds like chia or psyllium before mixing to ensure smooth binding and texture, unless whole seeds are desired for crunch.
  6. Mix ground substitutes with water and let sit to gel when required: chia seeds for about 5 minutes, whole chia seeds for 10 minutes, psyllium husk gels immediately.
  7. Adjust other liquids in your batter if using wetter substitutes like applesauce or banana to avoid overly wet consistency.
  8. Incorporate the prepared substitute into your recipe as you would flaxseeds, then check texture and flavor to ensure balance.

Notes

Grind chia seeds and blend them with water before use to prevent gritty texture and ensure proper binding in your recipe.
