Ingredients

  • 1 cup Reduced Beef Broth Deep umami, mildly acidic; simmer broth with wine and herbs to reduce by half uncovered before use.
  • 1 cup Espagnole Sauce Thicker, slightly less concentrated than demi-glace; use straight from jar or pot without further reduction.
  • 1 cup Beef Consommé Lighter, clearer finish; mount with a tablespoon of cold butter off heat for gloss.
  • 1 cup Mushroom Demi-glace Earthy umami, no meat; vegetarian option best for lighter proteins or gravies.
  • Soy Sauce Mix Mix 2 parts broth to 1 part soy sauce; saltier with intense umami intensity.
  • Brown Gravy Mix Use per package instructions; simpler and saltier but lacks complex layers.
  • 1 cup Reduced Veal Stock Rich, gelatinous texture; reduce by half uncovered with aromatics before use.

Method

  1. Choose substitute based on desired sauce depth, body, gloss, or dietary need.
  2. For broths and stocks, simmer uncovered to reduce by half, adding aromatics or wine as needed.
  3. Use a 1:1 substitution ratio for most substitutes except soy sauce mix and gravy mix.
  4. For Soy Sauce Mix, combine 2 parts broth with 1 part soy sauce before use.
  5. Use Brown Gravy Mix following package instructions, whisking constantly and tasting before adding salt.
  6. Mount consommé with a tablespoon of cold butter off heat to restore gloss and body.
  7. Adjust seasoning and check consistency; reduce sauce uncovered to thicken or whisk in slurry if too thin.

Notes

Reduce veal stock uncovered and taste-test slowly when using brown gravy mix to prevent watery or oversalted sauces.
