  • 1 cup Bulgur Wheat Pour boiling water over and soak 15–20 mins until tender. Swap 1:1 cup for cup.
  • 1 cup Rice Rinse before cooking to reduce starch. Add 10–15 mins cooking time. Use 1:1 swap by volume.
  • 1 cup Cauliflower Rice Sauté in a dry pan for 3–4 minutes to remove excess moisture. Use 1:1 swap by volume.
  • 1 cup Israeli Couscous Boil in salted water 8–10 minutes and drain. Use 1:1 swap by volume.
  • 1 cup Freekeh Simmer in broth for 20–25 minutes. Use 1:1 swap by volume.
  • 1 cup Pearled Barley Cook for 25–30 minutes. Rinse after boiling to prevent creamy texture. Use 1:1 swap by volume.

Method

  1. Choose a substitute based on the dish and desired texture: quinoa for crunch, bulgur for chew, rice for fluff, or cauliflower rice for low-carb.
  2. Prepare each substitute accordingly before using: rinse quinoa and rice, soak bulgur, sauté cauliflower rice, boil Israeli couscous, simmer freekeh, or cook barley with rinsing.
  3. Use a 1:1 volume swap with couscous, adjusting cooking times as needed for each substitute.
  4. After cooking, fluff grains with a fork or drain as needed to achieve the desired texture before serving.

Notes

Drain Israeli couscous well to avoid sogginess and maintain chewy texture in your dish.
