Ingredients

  • 1 Doubanjiang Use 1:1 ratio and reduce added salt by about a quarter; spicier and saltier than chili bean sauce
  • 1 Gochujang Use 1:1 ratio; sweeter with mild tang, works well in marinades and stews
  • 0.75 tablespoon Sriracha Use ¾ tablespoon per 1 tablespoon chili bean sauce; smoother, more vinegar-forward
  • Soy Chili Mix Combine 1 tablespoon soy sauce with 1 teaspoon chili paste per 1 tablespoon chili bean sauce; less thick, salty umami
  • 1 Black Bean Garlic Use 1:1 ratio; stronger garlic notes and less heat, add chili flakes if needed
  • 1 Chili Oil Soybean Use 1:1 ratio as a finishing drizzle or mix-in after cooking; oilier texture and bright heat
  • Miso Chili Mix Combine 1 tablespoon miso paste with 1 teaspoon chili flakes for every 1 tablespoon chili bean sauce; earthy umami and adjustable heat

Method

  1. Select your substitute based on desired fermented depth, heat level, and texture needs in your dish.
  2. Prepare substitutes as needed: blend mixes, measure sauces, and adjust chili flakes for heat control.
  3. For Doubanjiang, Gochujang, and Black Bean Garlic use a 1:1 ratio; for Sriracha use ¾ tablespoon per 1 tablespoon of chili bean sauce.
  4. For Soy Chili Mix and Miso Chili Mix, combine specified amounts of each component to match one tablespoon of chili bean sauce.
  5. Use Chili Oil Soybean as a finishing drizzle or add in the last minute of cooking to preserve flavor; avoid long cooking times.
  6. Adjust salt by reducing soy sauce or fish sauce when using saltier substitutes like Doubanjiang or Black Bean Garlic.
  7. Taste and adjust the seasoning and heat gradually before finishing your dish to ensure balance and desired consistency.

Notes

Reduce soy sauce slowly when using Doubanjiang to avoid overly salty dishes.
