Ingredients

  • 1 cup Chicken Broth Use 1 cup per 1 tablespoon chicken base; add early and reduce for depth; season with extra salt if needed
  • 1 cup Vegetable Broth Use 1 cup per 1 tablespoon chicken base; boost umami with soy sauce or nutritional yeast
  • 1 cube Chicken Bouillon Cubes Dissolve 1 cube in 1 cup water to replace 1 tablespoon chicken base; saltier and can taste artificial
  • 1 tablespoon Miso Paste Mix Mix 1 tablespoon miso paste with 0.5 cup water per 1 tablespoon chicken base; add after removing from heat
  • 1 tablespoon Veg Chicken Seasoning Use 1:1 ratio with chicken base; dissolve in hot water or stir directly; less complex herbal flavor
  • 1 tablespoon Soy Sauce Mix Combine 1 tablespoon soy sauce, 0.25 teaspoon garlic powder, and 0.5 cup water per 1 tablespoon chicken base; avoid in light-colored dishes
  • 1 teaspoon Stock Concentrate Use 1 teaspoon per 1 tablespoon chicken base; dilute with water; much more intense and salty

Method

  1. Select a substitute based on the dish's cooking method and flavor intensity needed—broths for lighter soups, concentrated substitutes for sauces and glazes.
  2. Prepare the substitute as required: dissolve bouillon cubes or stock concentrate in warm water, mix miso paste with water after heat, or combine soy sauce with garlic and water.
  3. Apply the appropriate substitute ratios from 1 cube or tablespoon to 1 cup or teaspoon as specified in the substitute details.
  4. For broths, add early in cooking and reduce if deeper flavor is desired; for concentrated substitutes, add gradually and adjust seasoning.
  5. Taste the dish after mixing substitute, then adjust salt and liquid consistency as needed to match the original flavor and texture.

Notes

Add chicken broth early and reduce it to avoid watery flavor dilution in your dish.
