Ingredients

  • 1 tablespoon Hoisin Sauce Sweeter and less salty; use 1:1 ratio as substitute
  • 1 tablespoon Soy Sauce with Minced Garlic Use 1 tablespoon soy sauce plus ½ teaspoon minced garlic; more liquid and sharper saltiness
  • 1 tablespoon Fermented Black Beans with Soy Sauce 1 tablespoon beans mashed with 1 tablespoon soy; chunkier and stronger pungency
  • 1 tablespoon Miso Paste with Soy Sauce Mix 1 tablespoon miso paste and 1 tablespoon soy sauce; earthier and less salty
  • 1 tablespoon Oyster Sauce Sweeter with seafood flavor; substitute at 1:1 ratio
  • 1 tablespoon Chili Bean Sauce (Toban Djan) Use 1:1 ratio; spicier and more robust, adjust heat carefully
  • 1 tablespoon Black Bean Garlic Paste Chunkier, concentrated flavor; use 1:1 ratio and reduce fresh garlic in recipe

Method

  1. Select a substitute based on dish needs: hoisin or oyster for quick stir-fries, fermented black bean mixes or miso-soy for deeper umami.
  2. For hoisin, oyster, chili bean sauce, or black bean garlic paste, use a 1:1 ratio to black bean sauce.
  3. To prepare soy garlic mix, combine 1 tablespoon soy sauce with ½ teaspoon minced garlic; add near the end of cooking to prevent burning.
  4. For fermented beans mix, mash 1 tablespoon fermented black beans with 1 tablespoon soy sauce until mostly broken down but some texture remains.
  5. Mix 1 tablespoon miso paste with 1 tablespoon soy sauce for a smooth, creamy substitute; add near end or simmer gently to avoid bitterness.
  6. Use oyster sauce stirred in near the end to avoid breaking the sauce under heat; not suitable for vegetarian or shellfish-free diets.
  7. Start with less chili bean sauce and taste before adding more due to variable heat levels; balance spice with sugar or vinegar if needed.
  8. Reduce or omit additional fresh garlic when using black bean garlic paste as it has higher garlic intensity.
  9. Taste and adjust seasoning as needed after substituting to ensure desired saltiness and flavor complexity.

Notes

Add soy garlic mix slowly to the pan to prevent garlic burning and harsh flavor in dishes.
