Ingredients

  • 1 cup Whole Wheat Flour Use 1:1 ratio; dough may need extra liquid to adjust stiffness.
  • 1 cup All-Purpose Flour Use 1:1 swap; no liquid adjustment needed.
  • 1 cup Brown Rice Flour Use 1:1 swap; may need extra liquid; monitor batter consistency closely.
  • 1 cup Oat Flour Use 1:1 ratio; add liquid if dough looks too dry due to quick moisture absorption.
  • 1 cup Rye Flour Use 1:1 swap for bread or flatbreads; mix with all-purpose for lighter baked goods.
  • 1 cup Spelt Flour Use 1:1 ratio; mix gently to avoid sticky dough.
  • 0.75 cup Chickpea Flour Use ¾ cup per 1 cup barley flour; add liquid as needed to prevent batter thickening too fast.

Method

  1. Choose the substitute based on whether you are baking bread or thickening a dish.
  2. Prepare the substitute by adding liquid gradually if needed, especially for flours that absorb more moisture like brown rice, oat, and chickpea flour.
  3. Apply the recommended substitution ratio for each flour as a guide—mostly 1:1, except chickpea flour at ¾ cup per cup barley flour.
  4. Check batter or dough consistency and texture; adjust liquids slowly and taste-test where flavor impact matters.

Notes

Add liquid slowly when using brown rice flour to prevent a gritty or overly thick batter.
