  • 1 cup Steel-Cut Oats Use 1:1 ratio; simmer 20–30 minutes, stir occasionally; creamy and hearty texture.

Method

  1. Choose your substitute based on dish: farro or steel-cut oats for soups, quinoa or bulgur for grain salads, brown rice for pilafs, couscous for quick meals.
  2. Prepare grains according to substitute type: simmer farro, brown rice, millet, or steel-cut oats; rehydrate bulgur with boiling water; cook couscous by soaking with hot water.
  3. Apply recommended ratios: 1 cup for barley substitutes except quinoa which uses ¾ cup per cup barley.
  4. Adjust cooking times to fit the grain: quinoa and couscous cook fastest, brown rice longest, farro, millet, and steel-cut oats intermediate.
  5. For quinoa rinse thoroughly before cooking to remove bitterness.
  6. Stir steel-cut oats occasionally when simmering to prevent sticking and achieve creamy texture.
  7. Taste and check consistency toward end of cooking; adjust broth or seasonings as needed.

Notes

Rinse quinoa before cooking to prevent bitterness and ensure a clean flavor in dishes.
