Ingredients

  • 1 to Turkey Bacon Use 1:1 ratio as a leaner, milder smoked cooking substitute. Add splash of oil to prevent sticking and season aggressively with smoked salt.
  • 1 teaspoon Smoked Paprika Mix 1 teaspoon smoked paprika with 1 tablespoon olive oil per 1 tablespoon bacon to add smoky flavor only. Does not provide crisp or meatiness.
  • 1 tablespoon Olive Oil Combine with smoked paprika to carry smoky flavor through dish in place of bacon fat.
  • 1 to Tempeh Bacon Use 1:1 ratio. Slice thin and press before marinating to help flavor penetrate and achieve crisp edges. Offers a nutty, earthy chew.
  • Prosciutto Use 1 slice per slice. Add at the end or crumble over finished dishes. Reduce other salt as prosciutto is saltier and delicate.
  • 1 to Pancetta Use 1:1 ratio. Render fat slowly over medium-low heat for crispy bits. Add smoked salt or liquid smoke to mimic bacon's smoky flavor.
  • 1 cup Mushroom Bacon Use 1 cup sliced mushrooms per 2 bacon strips. Roast thin slices with oil and soy sauce for umami-rich, chewy-crisp texture. Add smoked paprika for smoke.
  • Smoked Salmon Use equal weight. Add smoked salmon at the end or cold to maintain its soft, silky texture and smoky fish flavor. Avoid heating too long.

Method

  1. Choose your substitute based on desired function: cooking fat, smoky flavor, or texture.
  2. For turkey bacon, use equal amounts and cook over medium heat with a splash of oil to avoid sticking.
  3. Mix smoked paprika with olive oil at 1 teaspoon paprika plus 1 tablespoon oil per 1 tablespoon bacon called for in the recipe.
  4. Slice tempeh bacon thin, press to remove moisture, marinate, and pan-fry until edges turn golden for best texture.
  5. Cook prosciutto slices flat in a dry pan over medium-high heat for about 2 minutes per side and add at the end.
  6. Dice pancetta, render slowly over medium-low heat until crispy, and consider adding smoked salt or liquid smoke if needed.
  7. Prepare mushroom bacon by thinly slicing shiitake mushrooms, tossing with oil and soy sauce, and roasting at 375°F for 20-25 minutes.
  8. Add smoked salmon to dishes at the end or serve cold to preserve texture and flavor; avoid prolonged heat.
  9. Taste-test and adjust seasoning especially salt and smoke based on the substitute you use to keep flavor balanced.

Notes

Slice tempeh bacon thin and press before marinating to avoid gritty or mushy texture and maintain good chew.
