Ingredients
Method
- Choose your substitute based on the dish: acidity for sauces, body for braises, or clean finish for light steaming.
- Prepare the substitute according to its ratio: broth with lemon, grape juice with vinegar, dry vermouth 1:1, cider vinegar with water, or sparkling citrus water equal parts.
- Apply the substitute in place of white wine in your recipe, adjusting seasoning as needed, especially salt when using broth.
- Taste the sauce or dish before finishing cooking; add more acid, liquid, or seasoning if necessary for balance and desired brightness.
Notes
Adjust seasoning carefully when using Broth & Lemon to prevent overly salty sauces.
