Method
 

  1. Choose your substitute based on the recipe: whole bird, ground meat, or plant-based protein.
  2. Press tofu for 20 minutes to drain excess water and marinate tempeh for 30 minutes before use.
  3. Apply the correct substitution ratio: use 1:1 whole bird for chicken and duck; use equal weight for chicken sausage and tempeh; use 1 cup tofu for 1 cup cooked turkey.
  4. Adjust cooking times and methods: roast chicken and duck at 325°F-350°F; reduce chicken roasting time by 30 minutes; baste chicken frequently; score duck skin and drain fat during cooking.
  5. For ground-style cooking, crumble chicken sausage and reduce added salt; slice tempeh thin for stir-fries or crumble for taco filling.
  6. Taste-test and adjust seasoning as needed, especially with pre-seasoned chicken sausage and neutral tofu or tempeh.

Notes
