Ingredients

  • 1 cup Firm Tofu Use 1:1 weight ratio; press 15-20 minutes before marinating.
  • 1 cup Seitan Use 1:1 weight ratio; chewier texture, not gluten-free.
  • 1.25 cup Cooked Chickpeas Use 1.25:1 volume ratio; grainy texture, less chew.
  • 1 cup Portobello or Cremini Mushrooms Use 1:1 weight ratio; umami rich but lower protein.
  • 1 cup Cooked Lentils Use 1:1 volume ratio; softer texture, no chew.

Method

  1. Choose a substitute based on your recipe: tofu or seitan for cooking, chickpeas or mushrooms for salads, lentils for stews.
  2. Press firm tofu for 15-20 minutes to reduce moisture; slice mushrooms thick or cube seitan as needed.
  3. Use equal weight for tofu, seitan, and mushrooms; scale chickpeas up by 1.25 times to match volume.
  4. Marinate tofu or seitan for 15-20 minutes before cooking; season mushrooms and lentils during or after cooking.
  5. Taste and adjust seasoning or texture to suit your dish for best results.

Notes

  • Press tofu to avoid sogginess and improve texture.
  • Seitan is not suitable for gluten-free diets.
  • Pair mushrooms or lentils with nuts or seeds to boost protein content.
