Ingredients
Method
- Choose your substitute based on recipe type: vanilla and almond extracts for baking, dark rum for both baking and cocktails, maple syrup and molasses for cooking and glazes.
- For vanilla extract, use a 1:1 substitution. Adjust sweetness if needed and avoid using in cocktails.
- For almond extract, use between half to three-quarters of a teaspoon per teaspoon of rum extract. Use sparingly to avoid overpowering flavors.
- When substituting dark rum, use 1 tablespoon of liquid rum for each teaspoon of rum extract. Reduce other liquids slightly if baking.
- For maple syrup, use equal parts as substitute. Use in glazes and dense baked goods; avoid in light desserts.
- Use half a tablespoon of molasses per teaspoon of rum extract. Warm slightly before mixing for smoother incorporation and start with less to avoid bitterness.
- Taste your dish after substitution and adjust amounts carefully to maintain desired flavor and consistency.
Notes
Warm molasses slightly before adding to cold batters to avoid gritty texture and uneven flavor distribution.
