Ingredients

  • 1 to Cotija Use 1:1 ratio; saltier and drier than queso fresco
  • Feta Use about ¾ the queso fresco amount; tangier and briny with more creaminess
  • 1 to Paneer Use 1:1 ratio; very mild, needs seasoning with salt and lime
  • 1 to Tofu Use 1:1 ratio; press and season thoroughly, bland if unseasoned
  • 1 to Ricotta Salata Use 1:1 ratio; firmer and drier texture than queso fresco

Method

  1. Choose your substitute based on the dish: use Cotija or Ricotta Salata for both cold and warm dishes; feta and paneer suit cooking applications; tofu is best for vegan cold salads or garnishes.
  2. For tofu, press firmly for at least 15 minutes to remove moisture and crumble before seasoning with salt, lemon juice, or nutritional yeast to mimic queso fresco flavor.
  3. For paneer, crumble cold and toss with salt and citrus before using to improve flavor absorption and mimic queso fresco's taste more closely.
  4. Apply the standard 1:1 substitution ratio for most cheeses, except feta which should be used at about ¾ the amount due to its stronger flavor.
  5. Adjust seasoning to taste after substitution especially with sharper, saltier cheeses like Cotija to avoid overly salty dishes.
  6. Use substitutes that maintain textured crumble without melting for garnishes and finishing dishes, avoiding soft cheeses that won’t crumble properly.

Notes

  • Press and season tofu thoroughly before use to prevent bland taste and watery texture common with unprepared tofu substitutes.
