Ingredients

  • 1 cup Butternut Squash Puree Use 1:1 ratio for pumpkin; sweeter, nuttier flavor
  • 1 cup Sweet Potato Puree Use 1:1 ratio for pumpkin; denser, richer flavor; cut sweeteners 1–2 tablespoon if needed
  • 1 cup Carrot Puree Use 1:1 ratio for pumpkin; less creamy binding;
  • 1 cup Zucchini Puree Drain excess water first; use 1:1 ratio; add 2–3 tablespoon flour to thicken;
  • 1 cup Applesauce Use 1:1 ratio; thinner and fruitier; reduce sugar 2–3 tbsp;

Method

  1. Identify your recipe's need for moisture, binding, or mild flavor to choose the appropriate pumpkin substitute.
  2. For zucchini puree, drain excess water in a fine-mesh strainer for 10 minutes before use to avoid watery texture.
  3. Use any substitute puree in a 1:1 ratio to replace pumpkin puree.
  4. Adjust liquids by reducing 1–2 tablespoons if the substitute looks wetter than expected.
  5. Add extra flour as needed: 1–2 tablespoons for carrot or 2–4 tablespoons for zucchini and applesauce to maintain proper batter consistency.
  6. Cut back on sweeteners by 1–3 tablespoons when using sweeter substitutes like sweet potato or applesauce to balance flavor.
  7. Taste and check batter consistency before baking or cooking, making further adjustments to liquid or flour if necessary.

Notes

  • Drain zucchini puree well before use to prevent watery batter and maintain proper texture.
