Ingredients

  • 1 to 1 Parma Ham Substitute at a 1:1 ratio; slightly firmer texture than prosciutto; use raw or cooked.
  • 1 to 1 Speck Use a 1:1 ratio; best for cooked dishes; smokier and earthier flavor.
  • 1 to 1 Serrano Ham 1:1 ratio; saltier and drier; cut against the grain and serve at room temperature.
  • 1 to 1 Turkey Bacon Maintain 1:1 ratio; must be cooked until crisp before use; lighter and less salty.
  • 1 to 1 Pancetta Use 1:1 ratio; must be cooked first; richer, fattier cut from the belly.

Method

  1. Choose your substitute based on whether your dish is raw or cooked for best results.
  2. For raw applications, select Parma ham or Serrano ham and use a 1:1 substitute ratio.
  3. For cooked dishes like pasta or pizza, choose Speck or Pancetta, also at a 1:1 ratio.
  4. If using Turkey bacon, cook it until crisp and use in place of prosciutto in cooked dishes only.
  5. Slice Speck thin to avoid chewiness and reduce added salt in recipes due to its saltier cure.
  6. Cut Serrano ham against the grain to reduce chewiness and serve at room temperature for best texture.
  7. Cube or slice Pancetta thinly and render slowly in a cold pan to crisp fat and release flavor.
  8. Adjust seasoning and salt according to substitute flavor intensity and taste-test before serving.

Notes

Slice Parma ham thinly to prevent overly firm texture that could alter the dish's delicate balance.
