5 Best Substitutes for Pernod

5 from 1 vote
If you need Pernod but don't have it, choose a substitute based on whether you want anise flavor, alcohol content, or both. Use absinthe or pastis for alcohol-based swaps and anise extract or fennel tea for non-alcoholic options.

Ingredients

  • 1 to 1 Absinthe Use equal parts to Pernod. Stronger anise and higher proof.
  • 1 to 1 Pastis Use equal parts to Pernod. Slightly sweeter than Pernod.
  • 1 teaspoon Anise Extract Use 1 teaspoon per 1 tablespoon of Pernod. No alcohol, very concentrated.
  • 0.25 cup Fennel Tea Use ¼ cup brewed tea per tablespoon of Pernod. Mild licorice, no alcohol.
  • 1 to 1 Dry White Vermouth Use equal parts to Pernod. Herbaceous, less anise flavor.

Method

  1. Choose your substitute based on use case: absinthe or pastis for alcohol and anise; anise extract or fennel tea for no alcohol.
  2. For absinthe, pastis, and dry white vermouth, use a 1:1 substitution ratio with Pernod.
  3. For anise extract, use 1 teaspoon per 1 tablespoon of Pernod; adjust taste carefully due to concentration.
  4. For fennel tea, use ¼ cup brewed tea per 1 tablespoon Pernod; steep strong for at least 5 minutes.
  5. Adjust sweetness when using pastis if the dish tastes too rich, and reduce liquid volume if using fennel tea to avoid dilution.
  6. Add liquid substitutes gradually and taste as you go to ensure balance and desired flavor.

Notes

Add anise extract slowly when substituting to avoid overpowering medicinal flavor.
