Ingredients

  • 1 cup Chickpeas Use cooked chickpeas in a 1:1 ratio for cooked lentils. Add later to avoid mushiness. Firmer, nuttier texture.
  • 1 cup Split Peas Use cooked split peas 1:1 for cooked lentils. Add 15–20 minutes extra simmer time. Breaks down easily, great for thickening.
  • 1 cup Black Beans Use cooked black beans 1:1 for cooked lentils. Rinse canned beans thoroughly to remove starch and sodium. Rich, firm texture.
  • 1 cup Quinoa Use cooked quinoa 1:1 for cooked lentils. Rinse before cooking to remove bitterness. Lighter texture, won't thicken soups.
  • Chopped Mushrooms Use equal volume to lentils. Sauté until golden before adding to reduce moisture. Meaty, umami-forward flavor.

Method

  1. Choose your substitute based on desired texture and dish type—refer to the cooking/binding role needed.
  2. For chickpeas and black beans, rinse canned beans and add them later in cooking to keep firmness.
  3. Sauté chopped mushrooms until golden before adding to prevent excess moisture in the dish.
  4. Use substitutes at a 1:1 ratio by cooked volume for lentils, except mushrooms which use equal volume.
  5. For split peas, add an extra 15–20 minutes simmer to allow breakdown similar to lentils.
  6. Rinse quinoa before cooking to remove bitterness, then use as a lighter, non-thickening option in salads or bowls.
  7. Adjust cooking times slightly based on desired chunkiness or creaminess and always taste-test for seasoning and consistency.

Notes

Rinse canned black beans well before use to avoid adding unwanted starch and sodium to your dish.
