Ingredients

  • 1 part Pancetta Saltier and meatier than lardo; use equal amounts for best results.
  • 1 part Guanciale More intense pork flavor; use equal amounts as lardo substitute.
  • 1 part Pork Fatback No cured flavor or salt; control seasoning separately when substituting.
  • 0.75 part Coconut Oil Solidifies at room temperature; choose refined to minimize coconut aroma.
  • 1 part Butter Dairy flavor and burns easier; use moderate heat when substituting.

Method

  1. Choose substitute based on desired role: cured flavor or pure fat content.
  2. For cured pork flavor, pick pancetta or guanciale; for pure fat, choose pork fatback, coconut oil, or butter.
  3. If using pancetta or guanciale, dice or slice thin and render slowly over low to medium-low heat.
  4. Use the standard swap ratios: 1 part substitute to 1 part lardo except coconut oil at 0.75:1 ratio.
  5. Adjust seasoning gradually and taste as you go, especially with saltier substitutes like pancetta or guanciale.
  6. Avoid high heat with butter to prevent burning; use it mainly for finishing or spreading on warm foods.
  7. Add herbs or seasonings separately when using neutral substitutes like pork fatback to build flavor.
  8. Check final dish for desired fat texture and flavor balance before serving.

Notes

Dice pancetta finely and render slowly to prevent crispy bits and overly salty flavor in your dish.
