Ingredients
Method
- Choose your substitute based on the dish type and whether you want beans that hold shape or blend in.
- If using canned beans, rinse them to reduce excess sodium and drain well before use.
- For dried beans, adjust cooking time by adding 5 minutes earlier than kidney beans, except for delicate ones like cannellini which require gentle cooking.
- Apply the specified ratio for each substitute: 1:1 for most beans, ½ cup red lentils per 1 cup kidney beans for thickening.
- For pinto beans, mash half before adding to maintain some texture while mimicking kidney bean body.
- Use chickpeas for salads and dishes needing firm beans; roast them for added crunch if desired.
- Use red lentils only if you want the beans to break down and thicken soups or stews naturally.
- Taste and check consistency near the end of cooking to ensure the substitute blends well with the dish.
Notes
Rinse black beans thoroughly to prevent excess saltiness in your dish.
